Description

Rich, buttery, and irresistibly chewy, these microwave caramels are quick and easy to make with pantry staples—perfect for gifting or satisfying a caramel craving.


Ingredients

  • 1/2 cup butter
  • 1/2 cup light corn syrup
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1/2 cup sweetened condensed milk
  • 1 tsp vanilla extract

Instructions

  1. Butter an 8-inch square baking pan (or a 9×5 inch loaf pan for thicker pieces). Optionally line it with foil and butter the foil for easy removal.
  2. In a large microwave-safe bowl, melt the butter (about 1 minute in the microwave).
  3. Stir in the corn syrup, brown sugar, white sugar, and sweetened condensed milk. Mix well until sugars are mostly dissolved.
  4. Microwave on high for 3 minutes and 5–15 seconds. Start with 3 minutes 5 seconds to avoid overcooking.
  5. Carefully remove, stir, and scrape down the sides of the bowl.
  6. Return to the microwave for another 3 minutes and 5–15 seconds.
  7. Remove from microwave, stir in the vanilla extract.
  8. Pour the hot caramel mixture into the prepared dish and let it sit at room temperature for several hours until fully cooled and set.
  9. Once firm, cut into squares and wrap individually in waxed paper.

Notes

  • Microwave times may vary based on wattage—watch closely to avoid burning.
  • For easier removal, foil-lining and buttering the pan is highly recommended.
  • Store wrapped caramels in an airtight container for up to 2 weeks.
