Description
A classic Midwestern favorite, these juicy bratwursts are simmered in beer with onions, then grilled and served in toasted buns with tangy mustard and sweet, soft onions. Perfect for summer cookouts or game day!

- 5 bratwurst sausages
- 1 large yellow onion, thinly sliced
- 2 bottles (24 oz) of lager or German-style beer
- 5 brat buns or hot dog buns
- 1 tbsp butter
- 1/2 tsp black pepper
- Yellow mustard, for serving
Instructions
- In a large pot or deep skillet, combine bratwursts, sliced onions, and beer. Bring to a simmer (not a boil) over medium heat.
- Simmer gently for 20–25 minutes, turning brats occasionally, until cooked through.
- Preheat a grill or grill pan over medium-high heat.
- Remove brats from the beer and grill for 3–5 minutes, turning, until browned and lightly charred.
- In a separate skillet, melt butter and sauté the cooked onions from the beer until golden and slightly caramelized.
- Toast brat buns if desired.
- Place brats in buns, top with onions, and a generous squiggle of yellow mustard.
Notes
- Do not let the beer boil—keep it at a simmer to prevent bursting brats.
- Use a good quality lager or German-style beer for best flavor.
- Serve with pickles, sauerkraut, or potato salad for a complete meal.
