Description

A rustic, free-form tart featuring a flaky buttery crust filled with a vibrant mix of berries. This mixed berry galette is simple, elegant, and perfect for showcasing seasonal fruit.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 24 tbsp ice water
  • 2 cups mixed berries (blueberries, raspberries, strawberries, blackberries)
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)

Instructions

  1. In a bowl, combine flour and salt. Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  2. Add ice water one tablespoon at a time until the dough just comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  3. Preheat oven to 400°F (200°C).
  4. In a separate bowl, gently toss the mixed berries with sugar, cornstarch, lemon zest, lemon juice, and vanilla extract.
  5. Roll the chilled dough on parchment paper into a 12-inch circle and transfer to a baking sheet.
  6. Spoon the berry mixture into the center of the dough, leaving a 2-inch border around the edge.
  7. Fold the dough edges over the berries, pleating as needed to form a rustic shape.
  8. Brush the crust with beaten egg and sprinkle with coarse sugar.
  9. Bake for 35–40 minutes or until the crust is golden brown and the filling is bubbly.
  10. Let cool slightly before serving.
