- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 tsp salt
- 2–4 tbsp ice water
- 2 cups mixed berries (blueberries, raspberries, strawberries, blackberries)
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon zest
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 egg, beaten (for egg wash)
- 1 tbsp coarse sugar (for sprinkling)
Instructions
- In a bowl, combine flour and salt. Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time until the dough just comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
- Preheat oven to 400°F (200°C).
- In a separate bowl, gently toss the mixed berries with sugar, cornstarch, lemon zest, lemon juice, and vanilla extract.
- Roll the chilled dough on parchment paper into a 12-inch circle and transfer to a baking sheet.
- Spoon the berry mixture into the center of the dough, leaving a 2-inch border around the edge.
- Fold the dough edges over the berries, pleating as needed to form a rustic shape.
- Brush the crust with beaten egg and sprinkle with coarse sugar.
- Bake for 35–40 minutes or until the crust is golden brown and the filling is bubbly.
- Let cool slightly before serving.
