Base Layer

Babka Cake Layer
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1/2 cup sour cream
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1/2 cup sugar
- 1 tsp vanilla extract
Cream Filling
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Honey Glaze
- 1/4 cup honey
- 2 tbsp butter
- 2 tbsp water
- Pinch of salt
Instructions
- Make the Base – Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar. Press into an 8×8-inch baking dish. Bake for 8–10 minutes. Cool completely.
- Prepare the Babka Layer – In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, mix eggs, sour cream, oil, honey, sugar, and vanilla. Add dry ingredients and stir until just combined. Spread over the cooled crust and bake for 25–28 minutes, or until a toothpick comes out clean. Cool fully.
- Make the Cream Layer – Beat cold heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread evenly over the cooled babka layer.
- Drizzle the Glaze – In a saucepan, heat honey, butter, water, and salt until it begins to bubble. Let simmer for 2 minutes. Cool slightly, then pour over the cream layer. Chill the entire dessert for 1 hour before slicing.
