Rösti:
- 800 g firm potatoes, peeled and grated
- 200 g Mozzarella or Cheddar, diced
- 1 egg
- 50 g flour (use gluten-free flour for a gluten-free option)
- Salt and pepper to taste

Onion Mushroom Cream Sauce:
- 300 g mushrooms, finely chopped
- 1 onion, finely chopped
- 200 ml cream (use plant-based cream for a lighter version)
- 30 g butter
- 150 ml vegetable broth
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Rösti: Peel and grate the potatoes. Drain excess moisture by placing the grated potatoes in a kitchen towel. In a bowl, combine the grated potatoes with diced Mozzarella, egg, flour, salt, and pepper. Mix until a homogeneous dough forms.
- Heat oil in a large pan over medium heat. Form small patties from the potato mixture using a spoon and fry for 4-5 minutes on each side until golden brown. Drain the Rösti on paper towels.
- Onion Mushroom Cream Sauce: Sauté the onion in butter until soft and translucent. Add the mushrooms and cook until tender. Stir in the cream and vegetable broth, simmer until slightly thickened. Season with salt and pepper.
- Serve the Rösti topped with the Onion Mushroom Cream Sauce and garnish with fresh parsley.
