  • 1 cup pitted dates, soaked
  • 2 tbsp coconut sugar or monk fruit sweetener
  • Pinch of sea salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)
  • 1 1/4 cup chocolate chips

Instructions

  1. Prepare the Base Dough: Add the pecans, soaked dates, coconut sugar (or monk fruit), sea salt, vanilla, and cinnamon (if using) to a food processor. Blend until a sticky dough forms, scraping down the sides occasionally to ensure everything is well mixed. This process may take a few minutes.
  2. Shape the Bites: Roll the sticky mixture into small balls and place them on a lined cookie sheet. Gently flatten each ball slightly using your palm to form bite-sized discs. Place the tray in the freezer for about 15 minutes to let the bites firm up.
  3. Melt the Chocolate & Coat: While the bites chill, melt the chocolate chips until smooth using a microwave or double boiler. Dip each firmed-up bite into the melted chocolate, ensuring it is covered, then place it back on the lined cookie sheet. Top each coated bite with a pecan.
  4. Freeze to Harden: Return the cookie sheet to the freezer and leave the bites until the chocolate hardens completely, approximately 1 to 2 hours.
