- 1 cup lingonberries (fresh or frozen, thawed)
- 2/3 cup granulated sugar
- 2 large egg whites

Instructions
- In a bowl, combine lingonberries and sugar. Mash slightly to release some juice.
- In a separate large bowl, beat egg whites until soft peaks form.
- Gradually add the berry-sugar mixture to the egg whites while beating continuously.
- Continue beating for 5–7 minutes until the mixture is fluffy and light pink.
- Spoon into serving glasses and chill for at least 30 minutes before serving.
- Garnish with fresh mint if desired.

- For best texture, ensure the egg whites are at room temperature before whipping.
- Can be made with cranberries or red currants if lingonberries are unavailable.
- Use pasteurized egg whites for food safety if desired.
- Delicious served with shortbread or buttery biscuits on the side.
