Description

Trollkrem is a traditional Norwegian dessert made by whipping lingonberries, sugar, and egg whites into a light, mousse-like cream—delicately tart, fluffy, and beautifully pink, it’s a festive and refreshing treat.


Ingredients

  • 1 cup lingonberries (fresh or frozen, thawed)
  • 2/3 cup granulated sugar
  • 2 large egg whites
  • Fresh mint for garnish (optional)

Instructions

  1. In a bowl, combine lingonberries and sugar. Mash slightly to release some juice.
  2. In a separate large bowl, beat egg whites until soft peaks form.
  3. Gradually add the berry-sugar mixture to the egg whites while beating continuously.
  4. Continue beating for 5–7 minutes until the mixture is fluffy and light pink.
  5. Spoon into serving glasses and chill for at least 30 minutes before serving.
  6. Garnish with fresh mint if desired.

Notes

  • For best texture, ensure the egg whites are at room temperature before whipping.
  • Can be made with cranberries or red currants if lingonberries are unavailable.
  • Use pasteurized egg whites for food safety if desired.
  • Delicious served with shortbread or buttery biscuits on the side.
