Description

Omurice is a comforting and popular Japanese dish that pairs fluffy eggs with savory chicken fried rice, all topped with a glossy ketchup or demi-glace sauce. This satisfying fusion of Western and Japanese flavors is perfect for lunch or dinner and is loved by both kids and adults alike.

Ingredients

Units Scale
  • 2 cups white rice, cooked and cooled
  • 1/2 cup cooked chicken, diced
  • 1/2 cup mixed vegetables (frozen or fresh)
  • 1 small onion, finely chopped
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 tbsp butter or cooking oil
  • 4 large eggs
  • 2 tbsp milk
  • 1 tsp butter or oil
  • Ketchup or demi-glace sauce for drizzling (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Heat butter or oil in a skillet over medium heat. Add chopped onion and sauté until soft.
  2. Stir in chicken and mixed vegetables, cooking until heated through.
  3. Add rice, ketchup, soy sauce, Worcestershire sauce, salt, and pepper. Stir-fry everything together until evenly coated and warm. Set aside.
  4. In a bowl, beat eggs with milk.
  5. Heat a clean nonstick skillet with butter or oil, pour in the eggs, and swirl to coat the pan. Cook until just set but still slightly soft.
  6. Place half the rice mixture in the center of the omelet, fold sides over to enclose. Carefully flip onto a plate. Repeat for the second omelet.
  7. Drizzle with ketchup or demi-glace sauce and garnish with chopped parsley if desired.

Notes

  • Use day-old rice for better texture and easier stir-frying.
  • Customize fillings with other proteins like ham, bacon, or tofu.
  • Cook eggs gently to avoid overcooking and maintain softness.
