  • 3/4 cup plain yogurt or dairy-free yogurt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup fresh or frozen blueberries (do not thaw if frozen)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add in the oil, yogurt, vanilla, and egg. Stir until just combined. Gently fold in the blueberries.
  3. Fill the Muffin Cups: Divide the batter evenly among the muffin cups, filling about ¾ of the way full.
  4. Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
