  • 1 lb boneless, skinless chicken breast, diced

Orzo:

  • 1 tbsp olive oil
  • 1 cup uncooked orzo pasta

Sauce:

  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Add-Ins:

  • 1 cup fresh spinach, chopped
  • 1 cup cherry tomatoes, halved

Cheese:

  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Cook Chicken: In a large oven-safe skillet or baking dish, heat olive oil over medium heat and cook the diced chicken until lightly browned.
  3. Add Orzo and Sauce: Stir in orzo, chicken broth, cream, garlic powder, and Italian seasoning.
  4. Include Vegetables: Add spinach and cherry tomatoes. Stir gently to combine.
  5. Add Cheese: Sprinkle mozzarella and parmesan cheese evenly over the top.
  6. Bake Covered: Cover with foil and bake for 20 minutes.
  7. Final Bake: Remove foil and bake for another 10–12 minutes until bubbly and golden.
  8. Rest Before Serving: Let sit for 5 minutes before serving.
