Chicken:
- 1 lb boneless, skinless chicken breast, diced
Orzo:
- 1 tbsp olive oil
- 1 cup uncooked orzo pasta
Sauce:
- 1 1/2 cups chicken broth
- 1 cup heavy cream
- 1 tsp garlic powder
- 1 tsp Italian seasoning
Add-Ins:
- 1 cup fresh spinach, chopped
- 1 cup cherry tomatoes, halved
Cheese:
- 1 cup shredded mozzarella
- 1/2 cup grated parmesan cheese
- Salt and pepper, to taste
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Cook Chicken: In a large oven-safe skillet or baking dish, heat olive oil over medium heat and cook the diced chicken until lightly browned.
- Add Orzo and Sauce: Stir in orzo, chicken broth, cream, garlic powder, and Italian seasoning.
- Include Vegetables: Add spinach and cherry tomatoes. Stir gently to combine.
- Add Cheese: Sprinkle mozzarella and parmesan cheese evenly over the top.
- Bake Covered: Cover with foil and bake for 20 minutes.
- Final Bake: Remove foil and bake for another 10–12 minutes until bubbly and golden.
- Rest Before Serving: Let sit for 5 minutes before serving.
