Ground Beef Mixture:
- 1 lb ground beef or turkey
- 1 tablespoon olive oil (if using lean meat)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
Remaining Ingredients:
- 2 cups beef or chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup tomato sauce
- 8 oz uncooked pasta (penne or rotini)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Chopped cilantro and sliced jalapeños for garnish (optional)
Instructions
- Prepare Ground Beef Mixture: In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent. Add garlic, then ground beef. Cook until browned.
- Season and Simmer: Stir in taco seasoning, chili powder, cumin, salt, and pepper. Add broth, diced tomatoes, tomato sauce, and pasta. Bring to a boil.
- Cook Pasta: Reduce heat, cover, and simmer for 12-15 minutes until pasta is tender and liquid is mostly absorbed.
- Finish Dish: Remove from heat, stir in sour cream and cheddar cheese until creamy. Garnish with cilantro and jalapeños.
