  • 1 lb ground beef or turkey
  • 1 tablespoon olive oil (if using lean meat)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin

Remaining Ingredients:

  • 2 cups beef or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup tomato sauce
  • 8 oz uncooked pasta (penne or rotini)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped cilantro and sliced jalapeños for garnish (optional)

Instructions

  1. Prepare Ground Beef Mixture: In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent. Add garlic, then ground beef. Cook until browned.
  2. Season and Simmer: Stir in taco seasoning, chili powder, cumin, salt, and pepper. Add broth, diced tomatoes, tomato sauce, and pasta. Bring to a boil.
  3. Cook Pasta: Reduce heat, cover, and simmer for 12-15 minutes until pasta is tender and liquid is mostly absorbed.
  4. Finish Dish: Remove from heat, stir in sour cream and cheddar cheese until creamy. Garnish with cilantro and jalapeños.
