Description

Pão de Mel is a rich and spiced Brazilian honey cake, traditionally filled with creamy dulce de leche and coated in chocolate. These indulgent mini treats are soft, aromatic, and perfect for holiday gifting, parties, or enjoying with a cup of coffee.


Ingredients

For the Cake:

  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 tsp baking soda
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • Pinch of salt

For the Filling:

  • 1 cup dulce de leche

For the Coating:

  • 1 1/2 cups semi-sweet or dark chocolate, melted

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a muffin pan or use mini cake molds.
  2. In a large bowl, whisk together the honey, brown sugar, milk, oil, egg, and vanilla until smooth. Add in cinnamon, cloves, nutmeg, salt, baking soda, flour, and cocoa powder. Mix until just combined.
  3. Pour the batter into prepared molds, filling each about 2/3 full.
  4. Bake for 12–15 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  5. Slice each cake in half and spread a generous amount of dulce de leche on one side. Sandwich together.
  6. Dip each cake in melted chocolate, covering completely. Place on a parchment-lined tray to set.
  7. Chill until chocolate is firm, then store in an airtight container.
