For the Onions:
- 2 large Walla Walla onions (or any sweet onion), thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp sugar (optional, for extra sweetness)
For the Patty Melt:
- 1 lb ground beef (80/20 blend)
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1 tsp salt
- 4 slices cheddar cheese
- 4 slices pepper jack cheese
- 8 slices homemade white bread (or thick sandwich bread)
- 2 tbsp butter, softened (for toasting bread)
Instructions
- Caramelize the Onions: In a skillet, melt butter with olive oil over medium-low heat. Add onions and salt, stirring occasionally for 25–30 minutes until deep golden and caramelized. Add sugar if desired.
- Make the Patties: Shape ground beef into 4 thin patties, slightly wider than the bread slices (they’ll shrink when cooking). Season with garlic powder, salt, and pepper.
- Cook the Patties: Heat a skillet or griddle over medium-high heat. Cook patties 3–4 minutes per side until browned and cooked through.
- Assemble the Patty Melts: Butter one side of each bread slice. Place cheddar, a patty, caramelized onions, pepper jack, and another bread slice (butter side out).
- Grill the Sandwiches: Cook on a skillet or griddle over medium heat, pressing gently, until the bread is golden and the cheese is melted (about 3–4 minutes per side).
- Serve Hot: Slice in half and enjoy immediately while gooey and melty!
