Description

This homemade Patty Melt is the ultimate comfort sandwich — juicy beef patties layered with cheddar and pepper jack cheese, topped with sweet caramelized Walla Walla onions, and pressed between slices of golden homemade white bread. It’s rich, gooey, and packed with flavor, making it a diner classic with a gourmet twist.

For the Onions:

  • 2 large Walla Walla onions (or any sweet onion), thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp sugar (optional, for extra sweetness)

For the Patty Melt:

  • 1 lb ground beef (80/20 blend)
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 4 slices cheddar cheese
  • 4 slices pepper jack cheese
  • 8 slices homemade white bread (or thick sandwich bread)
  • 2 tbsp butter, softened (for toasting bread)

Instructions

  1. Caramelize the Onions: In a skillet, melt butter with olive oil over medium-low heat. Add onions and salt, stirring occasionally for 25–30 minutes until deep golden and caramelized. Add sugar if desired.
  2. Make the Patties: Shape ground beef into 4 thin patties, slightly wider than the bread slices (they’ll shrink when cooking). Season with garlic powder, salt, and pepper.
  3. Cook the Patties: Heat a skillet or griddle over medium-high heat. Cook patties 3–4 minutes per side until browned and cooked through.
  4. Assemble the Patty Melts: Butter one side of each bread slice. Place cheddar, a patty, caramelized onions, pepper jack, and another bread slice (butter side out).
  5. Grill the Sandwiches: Cook on a skillet or griddle over medium heat, pressing gently, until the bread is golden and the cheese is melted (about 3–4 minutes per side).
  6. Serve Hot: Slice in half and enjoy immediately while gooey and melty!
