Cheese Mixture:

  • 4 Large Eggs At Room Temperature, Separated
  • 1/2 Cup Sugar
  • 500 Grams Mascarpone at Room Temperature
  • 3/4 Cup Heavy Cream
  • 1 Teaspoon Almond Extract

Other Ingredients:

  • 1 1/2 Cups White Wine
  • 1/3 Cup Peach Liqueur Plus 2 Tablespoons
  • 24 Savoiardi Cookies
  • 5 Medium Peaches, Peeled, Pitted, And Cut Into 1-inch Cubes
  • 1/2 Cup Lightly Toasted Sliced Almonds

Instructions

  1. Beat the egg yolks: Beat the 4 egg yolks until light.
  2. Add sugar: Add the sugar and continue to beat until smooth.
  3. Mix in mascarpone: Add the mascarpone cheese and beat until blended.
  4. Beat egg whites: In a separate bowl, beat the egg whites until stiff.
  5. Fold in egg whites: Fold the egg whites into the cheese mixture.
  6. Add cream: Whip the heavy cream until soft peaks form, then fold this into the cheese mixture along with the almond extract.
  7. Prepare peaches: Stir 2 tablespoons of peach liqueur into the peaches.
  8. Soak cookies: Stir together the wine and peach liqueur in a bowl. Dip the cookies into the mixture one at a time.
  9. Layer cookies: Arrange the cookies at the bottom of the dish.
  10. Add cheese mixture: Spoon half the cheese mixture over the cookies, then add the diced peaches.
  11. Repeat layers: Add another layer of moistened cookies and finish with the remaining cheese mixture.
  12. Chill and serve: Sprinkle sliced almonds over the dessert and refrigerate for at least 6 hours or overnight.
