For the cookie bars:
- 1/2 cup unsalted butter, softened
- 3/4 cup creamy peanut butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup strawberry or raspberry jam
For the peanut butter topping:
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Make the cookie dough: In a mixing bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a smooth dough forms.
- Bake: Press the cookie dough evenly into the prepared pan. Bake for 18-20 minutes or until golden brown. Let cool slightly.
- Add the jelly layer: Spread the jam evenly over the cookie layer.
- Prepare the peanut butter topping: In a small bowl, mix peanut butter, powdered sugar, and milk until smooth. Pipe or drizzle over the bars in a swirl pattern.
- Set and slice: Allow to set before slicing into squares. Enjoy!
