Description

Dry Ingredients:

  • 1 1/2 Cups All-purpose Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • 2 Teaspoons Pumpkin Pie Spice
  • 1/2 Teaspoon Salt

Wet Ingredients:

  • 4 Eggs
  • 1 Cup Granulated Sugar
  • 1/4 Cup Dark Brown Sugar
  • 1 Teaspoon Vanilla Extract
  • 3/4 Cup Pumpkin Puree (Not Pumpkin Pie Filling)
  • 3/4 Cup Vegetable Oil

Instructions

  1. Preheat Oven: Preheat oven to 350 degrees F and spray an 8 x 4 inch loaf pan with baking spray.
  2. Mix Wet Ingredients: In a large bowl, whisk together eggs, sugars, and vanilla until smooth. Add pumpkin and oil, whisk until blended.
  3. Combine Dry and Wet Ingredients: Add dry ingredients to the wet mixture, mix just until blended (do not over mix).
  4. Bake: Pour batter into the prepared pan and bake for 60-65 minutes until a tester inserted into the center comes out clean.
  5. Cool and Serve: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool to room temperature.

  • This bread can be wrapped tightly and stored at room temperature for up to 3 days or frozen for up to 2 months.
