- 1/2 Teaspoon Salt
Wet Ingredients:
- 4 Eggs
- 1 Cup Granulated Sugar
- 1/4 Cup Dark Brown Sugar
- 1 Teaspoon Vanilla Extract
- 3/4 Cup Pumpkin Puree (Not Pumpkin Pie Filling)
- 3/4 Cup Vegetable Oil
Instructions
- Preheat Oven: Preheat oven to 350 degrees F and spray an 8 x 4 inch loaf pan with baking spray.
- Mix Wet Ingredients: In a large bowl, whisk together eggs, sugars, and vanilla until smooth. Add pumpkin and oil, whisk until blended.
- Combine Dry and Wet Ingredients: Add dry ingredients to the wet mixture, mix just until blended (do not over mix).
- Bake: Pour batter into the prepared pan and bake for 60-65 minutes until a tester inserted into the center comes out clean.
- Cool and Serve: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool to room temperature.
