Instructions
- Prepare the Cheese Spread: In a mixing bowl, beat together the finely shredded sharp cheddar, softened cream cheese, drained and chopped pimentos, mayonnaise, garlic powder, and cayenne pepper until the mixture becomes smooth and spreadable, ensuring all ingredients are well combined.
- Cut the Bread into Stars: Using star-shaped cookie cutters, stamp out star shapes from each slice of soft white bread, creating about 20-24 star pieces depending on bread size. These will serve as the sandwich bases and tops.
- Assemble the Sandwiches: Spread a generous layer of the prepared pimento cheese mixture onto half of the bread stars. Place the remaining star-shaped bread pieces on top to form sandwiches, gently pressing down to secure.
- Chill Before Serving: Arrange the star sandwiches in a single layer inside an airtight container or covered platter. Chill in the refrigerator for up to 24 hours to allow flavors to meld and to serve cold, enhancing their refreshing, creamy texture.
