Description

This tropical twist on your usual cold brew layers bold coffee over sweet pineapple juice and creamy coconut milk, topped with whipped cream and a cherry—refreshing, energizing, and summer-ready in every sip.

Ingredients

Units Scale
  • 1/2 cup chilled pineapple juice
  • 1/3 cup full-fat coconut milk (canned or carton)
  • 1/2 cup cold brew or strong iced coffee
  • 12 teaspoons simple syrup or maple syrup (optional)
  • Ice cubes
  • Whipped cream (for topping)
  • Pineapple wedge and maraschino cherry (for garnish)

Instructions

  1. Fill a tall glass with ice.
  2. Pour in pineapple juice, then coconut milk. Stir gently to combine.
  3. Sweeten with simple syrup if desired.
  4. Slowly pour cold brew over the back of a spoon to create layers.
  5. Top with a generous swirl of whipped cream.
  6. Garnish with a pineapple wedge and maraschino cherry.

Notes

  • For an extra tropical twist, try adding a splash of coconut syrup for added sweetness and flavor.
  • Adjust the sweetness by adding more or less syrup to your liking.
  • Can be served without whipped cream for a lighter version.
  • If you prefer dairy, substitute the coconut milk with regular milk or half-and-half.
