- 2–3 tbsp reserved pineapple juice
- Optional: 1 tbsp melted butter
- Optional: 1/4 tsp pineapple or vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 325°F (165°C) and grease a Bundt or tube pan.
- Cream Butter and Sugar: Cream together softened butter and sugar until light and fluffy (3-5 minutes).
- Add Eggs: Add eggs one at a time, mixing well after each addition. Stir in vanilla and optional pineapple extract.
- Combine Dry Ingredients: In another bowl, whisk together flour, baking powder, and salt. Gradually mix dry ingredients into the wet mixture alternately with sour cream until combined.
- Add Pineapple: Gently fold in drained crushed pineapple.
- Bake: Pour batter into the prepared pan and bake for 75-85 minutes until a toothpick comes out clean. Let cool in the pan for 15 minutes before transferring to a wire rack.
- Prepare Glaze: For the glaze, whisk powdered sugar with reserved pineapple juice until smooth; adjust consistency as needed.
- Glaze and Serve: Drizzle over cooled cake and let set before slicing.
