- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp cherry blossom extract or sakura essence (optional)
- 1/2 cup pitted sweet cherries, finely chopped
- 2–3 drops pink food coloring (optional)
- 1 tbsp cherry preserves or syrup (for swirl)
- Fresh cherries (optional topping)
- Edible flowers like pansies or violets (optional topping)
- Mint leaves (optional topping)
Instructions
- In a medium bowl, whisk together heavy cream, milk, sugar, vanilla, and cherry blossom extract until the sugar is fully dissolved.
- Stir in the finely chopped cherries and add a few drops of pink food coloring if desired.
- Pour the mixture into your ice cream maker and churn according to manufacturer instructions (about 20–25 minutes).
- When almost done, drizzle in the cherry preserves and allow it to swirl briefly.
- Transfer the churned ice cream to a lidded container and freeze for at least 4 hours, or until firm.
- Serve scooped into bowls and garnish with fresh cherries, edible flowers, and mint leaves if desired.
Notes
- Cherry blossom extract adds a subtle floral note but can be omitted for a fruitier flavor.
- Ensure cherries are finely chopped to avoid icy chunks in the finished ice cream.
- Allow the ice cream to sit at room temperature for 5–10 minutes before scooping for best texture.
