Description

A beautifully fragrant and creamy ice cream inspired by springtime cherry blossoms, blended with cherries and floral notes for a refreshing and elegant frozen dessert.


Ingredients

  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp cherry blossom extract or sakura essence (optional)
  • 1/2 cup pitted sweet cherries, finely chopped
  • 23 drops pink food coloring (optional)
  • 1 tbsp cherry preserves or syrup (for swirl)
  • Fresh cherries (optional topping)
  • Edible flowers like pansies or violets (optional topping)
  • Mint leaves (optional topping)

Instructions

  1. In a medium bowl, whisk together heavy cream, milk, sugar, vanilla, and cherry blossom extract until the sugar is fully dissolved.
  2. Stir in the finely chopped cherries and add a few drops of pink food coloring if desired.
  3. Pour the mixture into your ice cream maker and churn according to manufacturer instructions (about 20–25 minutes).
  4. When almost done, drizzle in the cherry preserves and allow it to swirl briefly.
  5. Transfer the churned ice cream to a lidded container and freeze for at least 4 hours, or until firm.
  6. Serve scooped into bowls and garnish with fresh cherries, edible flowers, and mint leaves if desired.

Notes

  • Cherry blossom extract adds a subtle floral note but can be omitted for a fruitier flavor.
  • Ensure cherries are finely chopped to avoid icy chunks in the finished ice cream.
  • Allow the ice cream to sit at room temperature for 5–10 minutes before scooping for best texture.
