  • 5 cups rice Chex cereal

Instructions

  1. Prepare the cereal: Place the rice Chex cereal in a large mixing bowl and set aside. Line a work surface or baking sheet with parchment or wax paper for cooling.
  2. Mix the sugar coating: In a gallon-size zip-top bag, add the powdered sugar and the instant pistachio pudding mix. Seal the bag and shake well to combine these dry ingredients thoroughly.
  3. Add almond flavor: Add the almond extract into the bag with the dry mix. Seal again and shake until the liquid is evenly incorporated into the sugar mixture.
  4. Melt the chocolate and butter: In a medium microwave-safe bowl, combine the white chocolate melting wafers and butter pieces. Microwave for 30 seconds, then stir. Continue microwaving in 15-second increments, stirring between each, just until the mixture is fully melted and smooth.
  5. Coat the cereal: Pour the melted chocolate and butter mixture over the Chex cereal in the large bowl. Gently stir quickly but thoroughly to evenly coat the cereal pieces before the chocolate hardens.
  6. Combine with sugar mix: Transfer the coated cereal into the zip-top bag containing the sugar and pudding mixture. Seal the bag and shake vigorously, ensuring that every piece of cereal is generously coated with the pistachio-flavored sugar dusting.

  • White chocolate chips often seize when melted, so it’s best to use high-quality white chocolate melting wafers and heat in short increments to prevent hardening. Ghirardelli melting wafers are recommended.
