- 5 cups rice Chex cereal

- 2 cups white chocolate melting wafers
- 1/4 cup butter, cut into pieces

- Prepare the cereal: Place the rice Chex cereal in a large mixing bowl and set aside. Line a work surface or baking sheet with parchment or wax paper for cooling.
- Mix the sugar coating: In a gallon-size zip-top bag, add the powdered sugar and the instant pistachio pudding mix. Seal the bag and shake well to combine these dry ingredients thoroughly.
- Add almond flavor: Add the almond extract into the bag with the dry mix. Seal again and shake until the liquid is evenly incorporated into the sugar mixture.
- Melt the chocolate and butter: In a medium microwave-safe bowl, combine the white chocolate melting wafers and butter pieces. Microwave for 30 seconds, then stir. Continue microwaving in 15-second increments, stirring between each, just until the mixture is fully melted and smooth.
- Coat the cereal: Pour the melted chocolate and butter mixture over the Chex cereal in the large bowl. Gently stir quickly but thoroughly to evenly coat the cereal pieces before the chocolate hardens.
- Combine with sugar mix: Transfer the coated cereal into the zip-top bag containing the sugar and pudding mixture. Seal the bag and shake vigorously, ensuring that every piece of cereal is generously coated with the pistachio-flavored sugar dusting.
- Cool and set: Spread the coated cereal evenly on the lined parchment or wax paper. Allow the pudding chow to cool completely, letting the coating set and harden for final crispness.
Notes
- White chocolate chips often seize when melted, so it’s best to use high-quality white chocolate melting wafers and heat in short increments to prevent hardening. Ghirardelli melting wafers are recommended.
- You can substitute with vanilla almond bark if preferred for the coating.
- To intensify the pistachio flavor, reduce powdered sugar to 1/3 cup and add another box of instant pistachio pudding mix.
