- 6 medium potatoes, thinly sliced
- 1 1/2 cups cooked bacon, chopped
- 1 cup shredded cheese (cheddar or Gruyère)
- 1/2 cup chopped onions
- 1/2 cup heavy cream
- 3 large eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme or rosemary
- Butter for greasing
- Optional: parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with butter.
- Layer half of the potato slices on the bottom of the dish, slightly overlapping.
- In a bowl, whisk together eggs, heavy cream, salt, pepper, and thyme.
- Sprinkle half of the chopped bacon, shredded cheese, and onions over the potatoes.
- Pour half of the egg mixture over the layered ingredients.
- Repeat the layers with the remaining potatoes, bacon, cheese, and egg mixture.
- Cover the dish with foil and bake for 40 minutes.
- Uncover and bake for an additional 20–25 minutes, or until the top is golden and a knife inserted comes out clean.
- Let rest for 10 minutes before slicing. Garnish with chopped parsley if desired.

- Use a mandoline slicer for evenly thin potato slices for uniform cooking.
- Swap herbs for different flavor profiles, like sage or oregano.
- Leftovers can be refrigerated and reheated in the oven or microwave.
