Description

A hearty and satisfying pie made with layers of thinly sliced potatoes, crispy bacon, savory herbs, and melted cheese, all baked together in a golden, creamy egg custard. Perfect for brunch or a cozy dinner.


Ingredients

  • 6 medium potatoes, thinly sliced
  • 1 1/2 cups cooked bacon, chopped
  • 1 cup shredded cheese (cheddar or Gruyère)
  • 1/2 cup chopped onions
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme or rosemary
  • Butter for greasing
  • Optional: parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with butter.
  2. Layer half of the potato slices on the bottom of the dish, slightly overlapping.
  3. In a bowl, whisk together eggs, heavy cream, salt, pepper, and thyme.
  4. Sprinkle half of the chopped bacon, shredded cheese, and onions over the potatoes.
  5. Pour half of the egg mixture over the layered ingredients.
  6. Repeat the layers with the remaining potatoes, bacon, cheese, and egg mixture.
  7. Cover the dish with foil and bake for 40 minutes.
  8. Uncover and bake for an additional 20–25 minutes, or until the top is golden and a knife inserted comes out clean.
  9. Let rest for 10 minutes before slicing. Garnish with chopped parsley if desired.

Notes

  • Use a mandoline slicer for evenly thin potato slices for uniform cooking.
  • Swap herbs for different flavor profiles, like sage or oregano.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
