Description

Indulge in the rich, moist Pumpkin Earthquake Cake, a delightful fall dessert combining spiced pumpkin cake and creamy swirls of cinnamon cream cheese filling. This luscious 9×13 cake is loaded with pumpkin pie spice, chocolate chips, and a silky cream cheese layer, perfect for cozy gatherings or holiday celebrations.

Ingredients

Scale

Cake

  • 1 box (15.25 ounces) Spice Cake Mix with Pudding in the mix
  • 3 large eggs
  • 1 cup canned 100% pure pumpkin
  • 3/4 cup water
  • 1/2 cup vegetable oil
  • 1/3 cup granulated sugar
  • 2 teaspoons pumpkin pie spice

Cream Cheese Filling

  • 8 ounces cream cheese, room temperature
  • 1/2 cup unsalted butter
  • 3 cups powdered sugar
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking pan generously with non-stick cooking spray to ensure the cake doesn’t stick.
  2. Mix Cake Batter: In a large mixing bowl, combine the spice cake mix, canned pumpkin, eggs, water, vegetable oil, granulated sugar, and pumpkin pie spice. Use a hand mixer or whisk to blend everything until fully incorporated and smooth.
  3. Pour Batter into Pan: Pour the prepared cake batter evenly into the greased baking pan, spreading it out to the edges.
  4. Prepare Cream Cheese Filling: In a microwave-safe bowl, melt the unsalted butter for about 30 seconds. Add the room temperature cream cheese to the melted butter and beat together with a hand mixer until smooth and creamy. Gradually add the powdered sugar and continue beating until fully combined and fluffy.
  5. Swirl Filling into Cake Batter: Drop spoonfuls of the cream cheese mixture over the top of the cake batter in the pan. Use a knife or skewer to gently swirl the cream cheese throughout the cake batter creating a marbled effect.
  6. Add Chocolate Chips: Sprinkle mini chocolate chips evenly over the top of the cake for extra sweetness and texture.
  7. Bake the Cake: Place the pan in the preheated oven and bake for 30 to 35 minutes. To check doneness, insert a toothpick into the center of the cake. When it comes out clean or with a few moist crumbs, the cake is ready.
  8. Cool Before Serving: Allow the cake to cool almost completely in the pan before cutting. This helps the cake to set and prevents it from being too soft or falling apart when sliced.

Notes

  • Make sure the cream cheese is at room temperature for easier blending.
  • Do not overmix the cake batter once the cream cheese filling is added to maintain the swirl effect.
  • Letting the cake cool sufficiently helps with cleaner slices and better texture.
  • Optional chocolate chips add delightful bursts of chocolate but can be omitted or substituted.
