Ingredients You’ll Need

Let’s talk about simplicity done right! Each ingredient in Pumpkin Seed Chocolate Bites punches above its weight to create a snack that dazzles with flavor, texture, and a look that’s truly snackable. Don’t be fooled by the short ingredient list—every component plays a starring role.

  • Pumpkin seeds: The crunchy backbone of these bites, packed with nutrients and a toasty, nutty flavor.
  • Salt: Just a pinch brings all the flavors into gorgeous harmony and highlights the natural sweetness.
  • Maple syrup: Adds subtle sweetness and helps the seeds bind into beautiful clusters.
  • Dark chocolate, melted: Brings luxurious richness and that classic snap to every bite.

How to Make Pumpkin Seed Chocolate Bites

Step 1: Prep Your Oven and Tools

Start by preheating your oven to 180°C (160°C fan) or 350°F, ensuring it’s nice and hot for a crispy result. Line a baking sheet with parchment paper for easy removal and cleanup. Gather a medium round cookie cutter for shaping your Pumpkin Seed Chocolate Bites, or simply keep a spoon handy if you prefer rustic clusters.

Step 2: Mix the Magic Together

In a medium bowl, toss together your pumpkin seeds, maple syrup, and that essential pinch of salt. Mix well until every single seed glistens with syrup. This helps everything stick together and ensures even flavor throughout.

Step 3: Shape Your Clusters

For neat, round bites, place the oiled cookie cutter on the parchment and spoon in a couple of teaspoons of the seed mixture. Gently press down to shape, then lift the cutter straight up. Repeat to form as many bites as you like. No cutter? No problem—just spoon small mounds directly onto your baking sheet!

Step 4: Bake to Golden Perfection

Slide your tray into the oven and bake for 15 to 20 minutes, keeping a close eye as the maple syrup caramelizes and the seeds turn glossy and fragrant. Once out, let them cool completely on the tray so they set into satisfying, crunchy coins or clusters.

Step 5: Coat with Chocolate

When your pumpkin seed clusters are cool, it’s time for the best part—chocolate! Dip each bite halfway into the melted dark chocolate for a chic look, or fully coat them for extra chocolaty indulgence. Place back on the parchment and refrigerate until the chocolate is set and shiny.

How to Serve Pumpkin Seed Chocolate Bites

Garnishes

A light sprinkle of flaky sea salt or a drizzle of extra melted chocolate right before serving makes these bites irresistible. For a burst of color, try adding a tiny pinch of shredded coconut or a few dried cranberries on top of the wet chocolate.

Side Dishes

Serve up Pumpkin Seed Chocolate Bites alongside a plate of fresh fruit—think sliced apples, juicy segments of orange, or ripe strawberries. They’re also divine with a cup of afternoon tea or an espresso, making your snack break feel extra special.

Creative Ways to Present

Pile the bites onto a beautiful platter for a party table, or pack them into mini cellophane bags for sweet little gifts. You can even layer them in a mason jar tied with a ribbon for a homemade hostess present. Their rustic charm and glossy chocolate finish look just as fabulous as they taste!

Make Ahead and Storage

Storing Leftovers

Pumpkin Seed Chocolate Bites keep brilliantly in an airtight container at room temperature for up to a week. Just make sure they’re fully cooled and the chocolate has set to avoid sticking. They’re perfect for grab-and-go snacking all week long!

Freezing

If you want to stash some bites away for future cravings, pop them in a freezer-safe container, separating layers with parchment paper. They’ll keep fresh for up to two months. Simply let them thaw for a few minutes before enjoying—it’s like having a secret stash of healthy treats!

Reheating

These bites are best enjoyed at room temperature, but if you crave a gooier texture, let them sit out for a few minutes to take the chill off if chilled or frozen. Try not to microwave, as the chocolate may melt unevenly.

FAQs

Can I use other seeds or nuts instead of pumpkin seeds?

Absolutely! Sunflower seeds or chopped nuts like almonds or pecans would be delicious here. The core idea is to keep the total dry ingredient quantity the same for the perfect bite.

Is there a way to make these pumpkin seed chocolate bites without maple syrup?

Yes, you can substitute honey or agave syrup for the maple syrup, keeping the sticky binding and mild sweetness. Just note that the flavor will change slightly based on your swap.

How do I keep the bites from falling apart?

Pressing the mixture firmly when shaping, and making sure the syrup evenly coats all the seeds, is key. Let the bites cool completely after baking to help them set up firmly before dipping in chocolate.

What if I don’t have dark chocolate on hand?

Milk or white chocolate can also be used for dipping or coating your Pumpkin Seed Chocolate Bites. Each variety will give a different, but equally irresistible, flavor profile.

Are these bites allergy-friendly or vegan?

They can be! As written, Pumpkin Seed Chocolate Bites are nut-free and gluten-free, and if you use dairy-free dark chocolate and maple syrup, they’re also vegan.

Final Thoughts

Whether you’re seeking a nutritious snack or a sweet treat that still feels light, Pumpkin Seed Chocolate Bites have a special way of satisfying your cravings. They’re so easy, fun to make, and even more fun to share. Give them a try—you just might find yourself making them again and again!

Description

These pumpkin seed chocolate bites make a great snack or healthier dessert. Made with only 4 ingredients and so simple to put together. A great one to make in advance to nibble on in between meals, or to take on the go with you when out and about. They taste amazing and have the most beautiful crunch!

Ingredients

Scale

Pumpkin Seed Chocolate Bites:

  • 200g pumpkin seeds
  • Pinch of salt
  • 2 tbsp maple syrup
  • 50g dark chocolate, melted

Instructions

  1. Preheat oven to 180C/160C fan/350F. Add the pumpkin seeds, maple syrup, and a pinch of salt to a bowl. Mix to coat all the seeds evenly.
  2. Option 1 – Place a lightly oiled round cookie cutter on a baking sheet lined with parchment paper. Spoon a couple of teaspoons of the mixture into the cutter and press down. Gently remove the cutter and repeat.
  3. Option 2 – If you don’t have a cookie cutter, simply spoon some of the mixture straight onto the lined baking sheet to make clusters instead.
  4. Bake for 15-20 minutes. Leave to cool completely to set.
  5. Once cooled, you can dip them or coat them in chocolate. Or a mixture of both!
  6. Refrigerate until the chocolate is set and enjoy!

Notes

  • If the rounds lose their shape once out of the oven, you can place a larger cookie cutter over them and gently swirl in a circular motion to nudge the edges inward. Or simply tidy with a spoon while they’re still warm/before the maple syrup cools down and hardens.
  • I used a medium round cookie cutter to shape them and ended up with 10 bites. You can use any size cookie cutter depending on how many you want/how big you would like them to be. Just bear in mind that the nutritional breakdown is based on 10 servings.
