For the Fries

  • 4 large potatoes (cut into fries) or 500 g frozen fries
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika

For the Ragu Sauce

  • 300 g ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 2 tablespoons tomato paste
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon chili flakes (optional)

For Toppings

  • ½ cup sour cream
  • ¼ cup ketchup
  • ¼ cup chopped parsley or green onions

For the Fried Cheese

  • 200 g mozzarella or halloumi cheese (cut into sticks or cubes)
  • ½ cup flour
  • 1 egg (beaten)
  • 1 cup breadcrumbs
  • Oil for frying

Instructions

  1. Prepare the Fries – Preheat oven to 220°C / 425°F. Toss fries with olive oil, salt, pepper, and paprika. Spread evenly on a baking tray. Bake for 25–30 minutes until golden and crispy.
  2. Make the Ragu Sauce – Heat olive oil in a pan over medium heat. Add chopped onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 1 minute. Add ground beef and cook until browned. Stir in tomato paste, crushed tomatoes, oregano, basil, salt, pepper, and chili flakes. Simmer for 10–15 minutes until thick and flavorful.
  3. Prepare Fried Cheese – Coat cheese pieces in flour, then dip into beaten egg. Roll in breadcrumbs until fully coated. Heat oil in a pan to 175°C / 350°F. Fry cheese pieces for 2–3 minutes until golden and crispy. Drain on paper towels.
  4. Assemble the Loaded Fries – Place hot fries on a serving plate. Spoon warm ragu sauce over the fries. Add sour cream and drizzle ketchup. Garnish with parsley or green onions. Serve with crispy fried cheese on the side.

  • Frozen fries work great for a quicker version of this recipe.
  • Halloumi cheese holds its shape better when frying.
