- 4 large russet potatoes, peeled and grated
- 4 cups chicken broth
- 1/2 cup unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
- In a large saucepan, melt butter over medium heat. Add chopped onion and garlic, and sauté for 3–4 minutes, until softened.

- Stir in the shredded chicken and mix everything together thoroughly.
- Transfer the potato and chicken mixture into the prepared baking dish and smooth the top with a spatula.
- Cover the dish with foil and bake for 1 hour.
- Remove the foil and bake for an additional 20–30 minutes, until the top is golden brown and crispy.
- Allow to cool for a few minutes before serving.
Notes
- Be sure to squeeze out excess moisture from the grated potatoes before adding to the broth.
- Chicken can be cooked in advance or use leftover roasted chicken.
- For a richer flavor, use homemade chicken broth.
- Pairs well with a simple green salad or steamed vegetables.
