Description

A traditional Acadian dish, Rappie Pie is made with grated potatoes, chicken, and a savory broth, all baked to perfection. This comforting, hearty dish is a perfect example of homey, Canadian cuisine.


Ingredients

  • 2 1/2 lbs chicken thighs or whole chicken, cooked and shredded
  • 4 large russet potatoes, peeled and grated
  • 4 cups chicken broth
  • 1/2 cup unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon thyme (optional)
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
  2. In a large saucepan, melt butter over medium heat. Add chopped onion and garlic, and sauté for 3–4 minutes, until softened.
  3. Add the grated potatoes to the pan, mixing well. Gradually add chicken broth while stirring, until the mixture reaches a consistency similar to mashed potatoes. Season with salt, pepper, thyme, and paprika.
  4. Stir in the shredded chicken and mix everything together thoroughly.
  5. Transfer the potato and chicken mixture into the prepared baking dish and smooth the top with a spatula.
  6. Cover the dish with foil and bake for 1 hour.
  7. Remove the foil and bake for an additional 20–30 minutes, until the top is golden brown and crispy.
  8. Allow to cool for a few minutes before serving.

Notes

  • Be sure to squeeze out excess moisture from the grated potatoes before adding to the broth.
  • Chicken can be cooked in advance or use leftover roasted chicken.
  • For a richer flavor, use homemade chicken broth.
  • Pairs well with a simple green salad or steamed vegetables.
