Instructions
- Mix the Base: In a large bowl, beat peanut butter, softened butter, and vanilla until smooth. Gradually add powdered sugar and mix until combined.
- Add the Crunch: Gently fold in Rice Krispies until evenly distributed.
- Shape: Roll into 1-inch balls and place on a parchment-lined tray. Chill in the freezer for 30 minutes.
- Melt Chocolate: In a microwave-safe bowl, melt chocolate chips and coconut oil (if using) in 30-second intervals, stirring until smooth.
- Dip & Set: Dip each ball into melted chocolate using a fork or skewer. Let excess drip off, then return to tray. Chill until set.
