For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted

For the filling:

  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the guava topping:

  • 1 cup guava paste, chopped
  • 1/4 cup water
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven: Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the bottom in foil.
  2. Prepare crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes.
  3. Make filling: Beat cream cheese, add sugar, then eggs one at a time. Mix in vanilla and sour cream.
  4. Bake: Pour filling over crust and bake for 50–55 minutes. Let cool in the oven.
  5. Chill: Refrigerate for at least 4 hours or overnight.
  6. Make guava glaze: Melt guava paste with water and lemon juice. Pour over chilled cheesecake.
  7. Chill again: Refrigerate until topping sets before serving.
