- 1 1/2 oz Empress 1908 Indigo Gin
- 2 1/2 oz pineapple juice
- 1/2 oz lemon juice
- 1/2 oz orgeat syrup
- Ice (crushed or cubed)
- Pineapple slice, for garnish
Instructions
- In a shaker, combine pineapple juice, lemon juice, and orgeat syrup with ice. Shake well until chilled.
- Strain into a tall glass filled with crushed ice.
- Slowly pour the Empress gin over the back of a spoon to float on top, creating a two-tone layer.
- Garnish with a fresh pineapple wedge.
- Serve immediately and stir before drinking to blend the flavors.
Notes
- Use clear or light-colored glassware to highlight the cocktail’s layered look.
- Chill your glass beforehand for a longer-lasting chill.
- Adjust sweetness with more or less orgeat to taste.
