Instructions
- Preparation: Preheat oven to 350°F and line a baking sheet with parchment paper.
- Spread shredded coconut on the baking sheet and toast for 4-5 minutes until golden brown.
- In a bowl, mix toasted coconut with cashew butter.
- Stuff each date with coconut-cashew mixture and place on a tray.
- Melt chocolate chips in intervals, then coat stuffed dates with melted chocolate.
- Chill in the fridge for at least an hour.
