Description

Unsweetened Shredded Coconut:

1 cup

Cashew Butter:

4 Tbsp

Dark Chocolate Chips:

1 cup


Instructions

  1. Preparation: Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Spread shredded coconut on the baking sheet and toast for 4-5 minutes until golden brown.
  3. In a bowl, mix toasted coconut with cashew butter.
  4. Stuff each date with coconut-cashew mixture and place on a tray.
  5. Melt chocolate chips in intervals, then coat stuffed dates with melted chocolate.
  6. Chill in the fridge for at least an hour.
