Description

A hearty and protein-packed sausage and white bean soup, perfect for warming up on chilly days. This comforting soup combines savory sausage, creamy white beans, aromatic onions, and garlic, simmered in flavorful chicken broth with herbs for a satisfying meal.

Ingredients

Scale

Meat

  • 8 oz sausage, sliced or crumbled

Vegetables & Aromatics

  • 1 medium onion, diced
  • 2 cloves garlic, minced

Legumes

  • 1 can (15 oz) white beans, drained and rinsed

Liquids

  • 4 cups chicken broth

Oil & Seasonings

  • 1 tablespoon olive oil
  • 1 teaspoon dried herbs (such as thyme or rosemary)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Brown the Sausage: Heat olive oil in a large pot over medium heat. Add the sausage and cook, breaking it into small pieces with a spoon, until browned and cooked through, about 5-7 minutes.
  2. Sauté Onion and Garlic: Add the diced onion and minced garlic to the pot with the sausage. Cook, stirring occasionally, until the onions become soft and translucent, approximately 4-5 minutes.
  3. Add Beans and Broth: Stir in the drained white beans along with the chicken broth. Add the dried herbs, then bring the mixture to a gentle simmer over medium-low heat.
  4. Simmer and Develop Flavors: Let the soup simmer gently for at least 20 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.
  5. Season and Serve: Taste the soup and adjust the seasoning with salt and freshly ground black pepper as needed. Serve the soup hot, accompanied by crusty bread if desired.

Notes

  • You can use spicy or sweet sausage depending on your taste preference.
  • For a thicker soup, mash some of the beans against the side of the pot before serving.
  • Fresh herbs like thyme or rosemary elevate the flavor but dried herbs work well too.
  • This soup keeps well and tastes even better the next day.
  • To make it gluten-free, ensure the sausage you choose contains no gluten additives.
