Ingredients
Ground Italian Sausage:
1 lb
Onion:
1 medium, diced
Carrots:
2, peeled & diced
Celery Stalks:
2, diced
Garlic Cloves:
3-4, minced
Potatoes:
4 medium, peeled & diced
Chicken Broth:
4 cups
Half-and-Half:
1 cup
All-Purpose Flour:
2 tbsp
Sharp Cheddar Cheese:
1 cup, shredded
Dried Thyme:
1 tsp
Smoked Paprika:
1/2 tsp
Salt & Pepper:
To taste
Olive Oil or Butter:
2 tbsp
Fresh Parsley or Thyme:
For garnish
Instructions
- Cook the Sausage: In a large pot, brown the sausage over medium heat. Set aside.
- Sauté Veggies: In the same pot, sauté onions, carrots, and celery until softened. Add garlic and cook for another minute.
- Add Potatoes & Broth: Stir in potatoes, thyme, paprika, salt, and pepper. Pour in chicken broth. Simmer until potatoes are tender.
- Make it Creamy: Whisk flour into half-and-half, then stir into the soup until slightly thickened.
- Cheesy Finish: Return cooked sausage to the pot, then add cheddar cheese. Adjust seasoning.
- Serve: Ladle into bowls, garnish, and serve hot with bread.
Notes
- For a spicy kick, use hot Italian sausage and red pepper flakes.
- Swap half the potatoes for cauliflower for a lighter version.
