Description

This refreshing Shrimp Ceviche recipe is bursting with vibrant flavors of shrimp, mango, avocado, and citrus. Perfect for a light and flavorful appetizer or main dish.

Ingredients

Scale

Shrimp:

  • 2 pounds shrimp (peeled and cooked)

Vegetables and Fruits:

  • 1 small red onion (diced)
  • 2 jalapenos (seeds removed then minced)
  • 1 cup cucumber (finely diced)
  • 2 cups Roma tomatoes (seeded and diced)
  • 1/2 cup cilantro leaves (finely chopped)
  • 2 avocados (seeded and chopped)
  • 2 large mangos (seeded and chopped)

Liquids and Seasonings:

  • 1/2 cup lime juice
  • 1/4 cup orange juice
  • Zest of 1 lime
  • Salt to taste

Additional:

  • Tortilla chips (for serving)

Instructions

  1. Chop half of the cooked shrimp and place in a large bowl. This helps distribute the shrimp flavor throughout the ceviche.
  2. Add the whole shrimp, red onion, jalapeno, cucumber, tomatoes, cilantro, mango, and avocado in a large bowl. These ingredients provide a medley of textures and tastes.
  3. Pour the lime, lime zest, and orange juice over the shrimp mixture. Add salt to taste. The citrus juices ‘cook’ the shrimp and enhance the flavors.
  4. Cover and refrigerate for at least 30 minutes or overnight. Marinating allows the flavors to meld together.
  5. Serve chilled with tortilla chips. Enjoy the ceviche with crunchy tortilla chips for a delightful contrast.

Notes

  • If refrigerating for more than 30 minutes, add the avocado just before serving to prevent browning.
