- 1/2 cup cilantro leaves (finely chopped)
- 2 avocados (seeded and chopped)
- 2 large mangos (seeded and chopped)
Liquids and Seasonings:
- 1/2 cup lime juice
- 1/4 cup orange juice
- Zest of 1 lime
- Salt to taste

Instructions
- Chop half of the cooked shrimp and place in a large bowl. This helps distribute the shrimp flavor throughout the ceviche.
- Add the whole shrimp, red onion, jalapeno, cucumber, tomatoes, cilantro, mango, and avocado in a large bowl. These ingredients provide a medley of textures and tastes.
- Pour the lime, lime zest, and orange juice over the shrimp mixture. Add salt to taste. The citrus juices ‘cook’ the shrimp and enhance the flavors.
- Cover and refrigerate for at least 30 minutes or overnight. Marinating allows the flavors to meld together.
