Pork Ribs:
- 3 lbs pork baby back ribs, cut into 3-rib sections
Sauce:
- 1 cup pineapple juice
- 1/2 cup soy sauce (low sodium)
- 1/3 cup brown sugar
- 1/4 cup ketchup
- 1 tbsp apple cider vinegar
- 1 tbsp minced garlic
- 1 tsp grated fresh ginger
- 1/2 tsp black pepper
Additional:
- 1 cup pineapple chunks (fresh or canned, drained)
- Sliced green onions, for garnish
- Cooked rice, for serving
Instructions
- Prepare the Sauce: In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, vinegar, garlic, ginger, and pepper.
- Cook the Ribs: Place ribs in the slow cooker and pour the sauce over them. Scatter pineapple chunks on top.
- Slow Cook: Cover and cook on low for 7–8 hours or on high for 4–5 hours, until ribs are tender and nearly falling apart.
- Optional Glazing: For a sticky glaze, transfer cooked ribs to a baking sheet, brush with sauce, and broil for 3–5 minutes.
- Serve: Serve hot over white rice, garnished with green onions.
