- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1/2 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional for heat)
Instructions
- Preheat your smoker to 225°F (107°C).
- Rub chicken breasts with olive oil to help the seasoning adhere.
- In a small bowl, combine smoked paprika, garlic powder, onion powder, thyme, cumin, black pepper, salt, and cayenne.
- Rub the spice mix evenly over the chicken breasts.
- Place the chicken on the smoker grates and cook for 60–90 minutes, or until internal temperature reaches 165°F (74°C).
- Remove from smoker and let rest for 5–10 minutes before slicing and serving.
Notes
- Adjust cayenne pepper based on desired heat level.
- Use a meat thermometer to ensure accurate internal temperature.
- Letting the chicken rest helps retain its juices.
