Description

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Strawberry Swirl:

  • 1/2 cup finely diced fresh strawberries
  • 2 Tbsp strawberry puree or jam

Instructions

  1. Preheat Oven: Preheat oven to 350 °F (175 °C) and line a baking sheet with parchment paper.
  2. Prepare Dry Ingredients: In a bowl, whisk together flour, baking soda, and salt.
  3. Prepare Wet Ingredients: In a separate bowl, beat together butter, cream cheese, and sugar until pale and fluffy (~2 mins). Add egg and vanilla, mixing well.
  4. Combine Ingredients: Scrape down the sides of the bowl and gradually mix in the dry ingredients. Gently fold in the diced strawberries and strawberry puree to create a swirl.
  5. Bake: Portion the dough (~2 Tbsp each) onto the baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes until the edges are set but the centers remain soft.
  6. Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
