Ingredients
Scale
Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
Alfredo Sauce:
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 ½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
Pasta:
- 8 ounces fettuccine pasta
- Water and salt for boiling
Garnish:
- Fresh chopped parsley (optional)
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes per side, or until fully cooked and golden brown. Remove chicken from skillet, let rest for a few minutes, then slice into strips.
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.
- Make the Alfredo Sauce: In the same skillet used for chicken, reduce heat to medium. Melt butter and sauté minced garlic until fragrant, about 1 minute. Slowly pour in heavy cream, stirring continuously. Bring mixture to a gentle simmer and cook for 4-5 minutes, until slightly thickened. Gradually whisk in Parmesan cheese until smooth and creamy. Season with salt and pepper to taste.
- Combine Pasta and Sauce: Add the cooked pasta into the Alfredo sauce, tossing gently to coat the noodles evenly. Add the sliced chicken on top or fold into the pasta and sauce mixture.
- Serve: Plate the chicken Alfredo and garnish with fresh chopped parsley if desired. Serve immediately while hot and creamy.
Notes
- For a lighter version, substitute half-and-half for the heavy cream, but the sauce will be less rich.
- Freshly grated Parmesan cheese melts better and provides superior flavor over pre-grated cheese.
- Be careful not to overcook the chicken to keep it juicy and tender.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
