Instructions
- Prepare the Sauce Mixture: Add ½ tsp soy sauce, ½ tsp chicken bouillon powder, ½ tsp chili oil, ½ tsp toasted sesame oil, 1 tbsp unsweetened soy milk, and 1 tbsp ground sesame seeds to each serving bowl. Mix well to combine. For multiple servings, mix all these ingredients in a jug first, then divide evenly.
- Crush Cashew Nuts: Roughly crush 30 g of cashew nuts using a mortar and pestle or by placing them in a bag and crushing with a rolling pin. Set aside.
- Sauté Aromatics: Heat a large pan or wok over medium heat. Add 1 tsp cooking oil, then add finely diced onion, ginger root, and garlic. Stir constantly to avoid burning and sauté for 2-3 minutes until fragrant.
- Cook Ground Pork: Add 150 g ground pork to the pan and season with a pinch of salt and pepper. Continue frying until the pork is fully browned.
- Add Flavorings: Stir in yellow miso paste, chili bean sauce, sake, sugar, and crushed cashew nuts. Mix thoroughly and heat until all ingredients are well combined and heated through.
- Cook Ramen Noodles: Boil ramen noodles according to the package instructions until al dente. Drain well.
- Assemble the Dish: Place the cooked noodles into the prepared bowls containing the sauce mixture.
- Top with Pork Mixture and Garnishes: Spoon the spicy seasoned pork over the noodles. Garnish with soft-boiled eggs, a drizzle of chili oil, and broccoli sprouts for freshness and additional flavor.
- Serve and Enjoy: Mix everything well before eating to combine the flavors thoroughly. Enjoy your spicy soupless Tan Tan ramen!
Notes
- You can adjust the chili oil and chili bean sauce quantities to control the spice level to your preference.
- Soft-boiled eggs add a creamy texture and richness that balance the spiciness well.
- Use freshly ground sesame seeds for the best flavor in the sauce mix.
- Crushing cashew nuts rather than chopping preserves a bit of crunch without being too coarse.
- This recipe serves 2 portions but can be easily scaled up for more servings.
