Description

Tender chicken breasts are rolled around a flavorful spinach and feta filling, then baked to juicy, golden perfection. This dish is healthy, elegant, and packed with Mediterranean flavor.

Chicken Rolls:

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1 1/2 cups fresh spinach, chopped
  • 3/4 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon oregano
  • Salt and black pepper, to taste
  • Toothpicks or kitchen twine, for securing

Optional:

  • lemon zest or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Sauté garlic and spinach in olive oil until wilted. Remove from heat and stir in feta and sun-dried tomatoes.
  2. Pound chicken breasts to about ¼ inch thickness. Season with salt, pepper, and oregano.
  3. Place 2–3 tablespoons of the filling mixture onto each piece of chicken and roll tightly. Secure with toothpicks or twine.
  4. Sear each roll in a skillet over medium heat until golden on all sides (about 2–3 minutes per side).
  5. Transfer to a baking dish and bake for 20–25 minutes or until chicken is cooked through.
  6. Optional: Drizzle with pan juices and sprinkle with fresh parsley or lemon zest before serving.

Notes

  • Add pine nuts or cream cheese to the filling for a richer texture.
  • Use mozzarella or goat cheese if you don’t have feta.
  • Great served with rice, orzo, or roasted veggies.
