Chicken Rolls:
- 4 boneless, skinless chicken breasts, pounded thin
- 1 1/2 cups fresh spinach, chopped
- 3/4 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon oregano
- Salt and black pepper, to taste
- Toothpicks or kitchen twine, for securing

Instructions
- Preheat oven to 375°F (190°C). Sauté garlic and spinach in olive oil until wilted. Remove from heat and stir in feta and sun-dried tomatoes.
- Pound chicken breasts to about ¼ inch thickness. Season with salt, pepper, and oregano.
- Place 2–3 tablespoons of the filling mixture onto each piece of chicken and roll tightly. Secure with toothpicks or twine.
- Sear each roll in a skillet over medium heat until golden on all sides (about 2–3 minutes per side).
- Transfer to a baking dish and bake for 20–25 minutes or until chicken is cooked through.
- Optional: Drizzle with pan juices and sprinkle with fresh parsley or lemon zest before serving.
Notes
- Add pine nuts or cream cheese to the filling for a richer texture.
- Use mozzarella or goat cheese if you don’t have feta.
- Great served with rice, orzo, or roasted veggies.
