For the Brownies:
- 1 box strawberry cake mix with pudding in the mix
- 2 large eggs
- 1/3 cup vegetable or canola oil (80 ml)
- 1 teaspoon vanilla extract (5 ml)
For the Frosting:
- 3/4 cup powdered sugar (90g)
- 2 tablespoons strawberry preserves (40g)
- 1 ½ tablespoons milk (22ml)
- 1 tablespoon cream cheese (15g – optional)
Instructions
- Preheat oven: Preheat oven to 350 degrees F. Prepare a 8×8 pan by spraying with nonstick spray or lining with foil.
- Mix & Bake: In a large bowl, combine strawberry cake mix, eggs, oil, and vanilla extract. Press the mixture into the prepared pan and bake for 18-22 minutes until just done. Let cool completely.
- Prepare the Frosting: In a small bowl, whisk together powdered sugar, strawberry jam, cream cheese (if using), and milk. Spread over the cooled brownies.
Notes
- You can customize the frosting by adding a dash of lemon zest for a citrusy twist.
- For a richer flavor, top the brownies with fresh sliced strawberries before serving.
