For the Cake Truffles:
- 1 box (15.25 oz) strawberry cake mix (e.g., Betty Crocker)
- 1 block (8 oz) cream cheese, softened
- 1/3 cup cream cheese chips, roughly chopped
For Coating:
- 2 10 oz bags Ghirardelli vanilla melting wafers
- 1/2 cup Wilton pink candy melts
- 1/2 cup Wilton bright pink candy melts
- Sprinkles (optional)
Instructions
- Prepare Cake Mix: Preheat oven to 350°F. Heat treat the cake mix by spreading it on a baking sheet and baking for 5 minutes. Cool completely.
- Make Truffle Dough: Beat softened cream cheese until creamy. Mix in cooled cake mix and cream cheese chips until dough forms. Chill for 2 hours.
- Form Balls: Scoop dough into balls and chill for 15 minutes.
- Coat Truffles: Melt vanilla wafers and coat each ball. Add sprinkles to some. Drizzle melted candy melts over others.
- Serve: Allow truffles to set before enjoying!
Notes
- Store truffles in the refrigerator for up to 5 days.
- Chilling the dough makes rolling easier and prevents cracking of the coating.
- If you prefer, you can heat treat the cake mix in the microwave instead of the oven.
