Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease.
  2. Prepare strawberries: Wash, dry, and dice strawberries into small pieces (about 1/4 inch). Blot with paper towels to remove excess moisture.
  3. Mix dry ingredients: In a medium bowl, whisk together flour, graham cracker crumbs, baking powder, and salt.
  4. Cream butter and cream cheese: In a large bowl, beat softened butter, cream cheese, and sugar until light and fluffy (1-2 minutes with a hand mixer).
  5. Add egg and vanilla: Mix in egg and vanilla extract until smooth. Add lemon zest if desired.
  6. Combine wet and dry ingredients: Add dry ingredients to wet mixture in two batches, mixing on low speed or with a spatula until just combined.
  7. Add strawberries and chocolate: Gently fold in diced strawberries and optional white chocolate chips. If dough is too wet, chill for 15-30 minutes.
  8. Scoop and bake: Scoop dough (about 2 tablespoons per cookie) onto prepared baking sheet, spacing 2 inches apart. Shape into hearts if desired.
  9. Bake: Bake for 12-15 minutes, until edges are golden and centers are set but still soft.
