  • 1 tsp pure vanilla extract

Instructions

  1. Cook Berries: In a medium saucepan over low to medium heat, add the frozen raspberries and diced or frozen strawberries. Let the berries soften and become soupy, cooking for about 10 minutes while stirring occasionally.
  2. Add Sweetener: Stir in the sugar or sweetener packets to the berry mixture. Taste and adjust sweetness depending on the natural sweetness of the berries.
  3. Add Honey and Heat: Mix in the honey thoroughly, then continue heating the mixture for an additional 5 minutes, stirring occasionally to combine all flavors.
  4. Cool Fruit Puree: Remove the saucepan from heat and let the berry mixture sit for a few minutes to cool slightly.
  5. Puree Mixture: Transfer the mixture to a blender and puree until smooth.
  6. Strain Berries: Pour the puree through a fine mesh strainer or colander set over a measuring cup to separate seeds from the liquid. Tap the strainer gently to extract as much liquid as possible, working in batches.
  7. Extract Additional Liquid: Run a bit of the half and half cream through the strainer with the seeds to extract any remaining raspberry juice. Collect and combine this liquid with the strained berry juice.
  8. Combine Cream and Flavor: Pour the remainder of the half and half cream into the strained berry liquid. Add the vanilla extract and stir well to combine the creamy mixture.
