These strawberry pie bars have a buttery crumb crust, creamy cheesecake layer, and sweet-tart strawberry filling all baked into soft, handheld slices—perfect for summer gatherings or an anytime treat.

- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 3 cups all-purpose flour
- 1 1/2 cups fresh strawberries, diced
- 1/3 cup granulated sugar (for filling)
- 2 tsp cornstarch
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar (for cream cheese layer)
- 1 egg
- 1/2 tsp vanilla extract (for cream cheese layer)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
- In a bowl, mix melted butter, granulated sugar, brown sugar, vanilla, salt, and flour until crumbly.
- Press 2/3 of the mixture into the prepared pan to form the crust. Reserve the remaining third for the topping.
- In a saucepan over medium heat, combine diced strawberries, sugar, and cornstarch. Cook for 5–7 minutes until thickened. Let cool.
- In another bowl, beat softened cream cheese, sugar, egg, and vanilla until smooth and creamy.
- Spread the cream cheese mixture evenly over the crust.
- Top with the strawberry filling and gently spread to cover.
- Sprinkle the reserved crumble mixture over the top.
- Bake for 35–40 minutes or until golden and set. Let cool completely before slicing into bars.
Notes
- Use parchment paper for easy removal and slicing of bars.
- Chill the bars before cutting for cleaner slices.
- Bars can be stored in the fridge for up to 4 days.
