Description

These strawberry pie bars have a buttery crumb crust, creamy cheesecake layer, and sweet-tart strawberry filling all baked into soft, handheld slices—perfect for summer gatherings or an anytime treat.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 3 cups all-purpose flour
  • 1 1/2 cups fresh strawberries, diced
  • 1/3 cup granulated sugar (for filling)
  • 2 tsp cornstarch
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for cream cheese layer)
  • 1 egg
  • 1/2 tsp vanilla extract (for cream cheese layer)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
  2. In a bowl, mix melted butter, granulated sugar, brown sugar, vanilla, salt, and flour until crumbly.
  3. Press 2/3 of the mixture into the prepared pan to form the crust. Reserve the remaining third for the topping.
  4. In a saucepan over medium heat, combine diced strawberries, sugar, and cornstarch. Cook for 5–7 minutes until thickened. Let cool.
  5. In another bowl, beat softened cream cheese, sugar, egg, and vanilla until smooth and creamy.
  6. Spread the cream cheese mixture evenly over the crust.
  7. Top with the strawberry filling and gently spread to cover.
  8. Sprinkle the reserved crumble mixture over the top.
  9. Bake for 35–40 minutes or until golden and set. Let cool completely before slicing into bars.

Notes

  • Use parchment paper for easy removal and slicing of bars.
  • Chill the bars before cutting for cleaner slices.
  • Bars can be stored in the fridge for up to 4 days.
