Ladyfinger Shell:

  • 1 package ladyfingers (about 24-30)

Strawberry Mousse:

  • 2 cups fresh strawberries, sliced
  • 1 cup strawberry puree (blend fresh strawberries + a little sugar)
  • 1 packet unflavored gelatin (7g)
  • 3 tbsp cold water
  • 1 1/2 cups heavy cream (cold)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar

Instructions

  1. Prepare the Ladyfinger Shell – Line the sides of a springform pan with ladyfingers (flat side inward) and arrange more on the bottom to form a base.
  2. Make the Strawberry Mousse – Bloom gelatin in cold water, dissolve in warm strawberry puree. Beat cream cheese and sugar, add strawberry mixture. Whip cream, sugar, and vanilla, fold into strawberry mixture.
  3. Assemble – Pour half the mousse over the ladyfinger base, add sliced strawberries, pour the remaining mousse, and smooth the top.
  4. Chill & Finish – Refrigerate for at least 6 hours. Top with whipped cream and fresh strawberries before serving.
