- 2 cups golden sandwich cookies (like Golden Oreos), crushed
- 4 tbsp melted butter
- 1/4 cup freeze-dried strawberries, crushed
- 2 cups vanilla ice cream, softened
- 1/2 cup chopped strawberries
- 1 tsp vanilla extract
- 2 tbsp sweetened condensed milk (optional, for extra creaminess)
Instructions
- Line an 8×8-inch pan with parchment paper, leaving an overhang for easy removal.
- In a bowl, mix crushed cookies, melted butter, and crushed freeze-dried strawberries until crumbly.
- Press half of the crumb mixture evenly into the bottom of the pan to form the crust. Freeze for 10 minutes.
- In another bowl, combine softened ice cream, chopped strawberries, vanilla extract, and sweetened condensed milk.
- Spread the ice cream mixture evenly over the frozen crust.
- Sprinkle remaining shortcake crumble on top, pressing lightly.
- Freeze for at least 4 hours, or until fully set.
- Lift from pan, slice into bars, and serve immediately. Keep leftovers frozen.
Notes
- Use a sharp knife dipped in hot water for cleaner slicing.
- For extra strawberry flavor, stir in a spoonful of strawberry jam into the ice cream mixture.
