Description

Creamy vanilla ice cream dotted with sweet strawberry bits, layered between golden cookie crumbles with a hint of crunch — these no-bake strawberry shortcake bars are the perfect frozen treat.


Ingredients

  • 2 cups golden sandwich cookies (like Golden Oreos), crushed
  • 4 tbsp melted butter
  • 1/4 cup freeze-dried strawberries, crushed
  • 2 cups vanilla ice cream, softened
  • 1/2 cup chopped strawberries
  • 1 tsp vanilla extract
  • 2 tbsp sweetened condensed milk (optional, for extra creaminess)

Instructions

  1. Line an 8×8-inch pan with parchment paper, leaving an overhang for easy removal.
  2. In a bowl, mix crushed cookies, melted butter, and crushed freeze-dried strawberries until crumbly.
  3. Press half of the crumb mixture evenly into the bottom of the pan to form the crust. Freeze for 10 minutes.
  4. In another bowl, combine softened ice cream, chopped strawberries, vanilla extract, and sweetened condensed milk.
  5. Spread the ice cream mixture evenly over the frozen crust.
  6. Sprinkle remaining shortcake crumble on top, pressing lightly.
  7. Freeze for at least 4 hours, or until fully set.
  8. Lift from pan, slice into bars, and serve immediately. Keep leftovers frozen.

  • Use a sharp knife dipped in hot water for cleaner slicing.
