  • 4 tbsp unsalted butter
  • 1 tbsp cornstarch

For the Blueberry Layer:

  • 10 oz fresh blueberries
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp honey
  • 1 tbsp heavy cream

Instructions

  1. Prepare the Crust: Combine flour, sugar, and salt. Cut in butter, add vanilla and cream, mix into dough. Press into pan and chill.
  2. Bake the Crust: Preheat oven, bake crust until golden, then cool.
  3. Make the Lemon Layer: Cook egg, lemon juice, honey, butter, and cornstarch until thickened. Pour over crust and chill.
  4. Prepare the Blueberry Layer: Cook blueberries, lemon juice, cornstarch, honey until thick. Blend for smoothness, stir in cream.
  5. Assemble the Tart: Spread blueberry layer over lemon layer, chill until set.
  6. Serve: Slice and serve chilled, garnish with zest or berries.
