- 3/4 cup salted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Sprinkles
Cream Cheese Buttercream Frosting
- 2 ounces cream cheese, softened
- 3 cups powdered sugar
- 1/4 cup butter
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- Pink or red food coloring gel (optional)
Instructions
- Preheat oven to 350°F and grease 2 regular muffin pans with nonstick cooking spray.
- Cream together butter and sugar until light and fluffy. Add egg and extracts; beat until smooth.
- Whisk together flour, baking powder, and baking soda in a separate bowl.
- Add flour mixture to wet mixture; mix until dough forms.
- Press cookie dough into cupcake pan bottom and halfway up the sides.
- Bake for 12 minutes; cool for at least 15 minutes. Form cup shape in the center.
- Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk; mix. Add food coloring if desired.
- Fill piping bag with frosting; swirl into each cookie cup. Top with sprinkles. Enjoy!
