Ingredients
Scale
Crust
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted butter
Filling
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
Topping
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 2 ripe peaches, sliced
Instructions
- Preheat and prepare pan: Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan to ensure the cheesecake doesn’t stick.
- Make the crust: In a bowl, combine the graham cracker crumbs, ¼ cup sugar, and melted butter. Press this mixture firmly into the bottom of the prepared pan to create an even crust layer.
- Prepare the filling: Beat the cream cheese in a large mixing bowl until smooth. Gradually add 1 cup sugar and vanilla extract, continuing to beat until well combined and creamy.
- Add eggs: Add the eggs one at a time to the cream cheese mixture, mixing well after each addition to maintain a smooth batter.
- Incorporate sour cream: Stir the sour cream gently into the batter until fully combined and smooth.
- Assemble for baking: Pour the cheesecake batter over the crust in the springform pan. Evenly arrange sliced peaches and fresh mixed berries on top of the batter.
- Bake: Place the pan in the oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly when nudged.
- Cool and chill: Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours to fully set and develop flavor.
Notes
- Use a mix of your favorite berries for variety, such as blackberries or cherries.
- Garnish with additional fresh berries and peach slices before serving for a beautiful and appetizing presentation.
