Description

This Summer Berry & Peach Cheesecake is a fresh and fruity dessert that combines the sweetness of ripe peaches with the tangy burst of mixed berries. Perfect for summer, this creamy cheesecake features a graham cracker crust and a smooth, rich filling topped with vibrant peach slices and fresh berries, creating a delightful treat for any occasion.

Ingredients

Scale

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter

Filling

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Topping

  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced

Instructions

  1. Preheat and prepare pan: Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan to ensure the cheesecake doesn’t stick.
  2. Make the crust: In a bowl, combine the graham cracker crumbs, ¼ cup sugar, and melted butter. Press this mixture firmly into the bottom of the prepared pan to create an even crust layer.
  3. Prepare the filling: Beat the cream cheese in a large mixing bowl until smooth. Gradually add 1 cup sugar and vanilla extract, continuing to beat until well combined and creamy.
  4. Add eggs: Add the eggs one at a time to the cream cheese mixture, mixing well after each addition to maintain a smooth batter.
  5. Incorporate sour cream: Stir the sour cream gently into the batter until fully combined and smooth.
  6. Assemble for baking: Pour the cheesecake batter over the crust in the springform pan. Evenly arrange sliced peaches and fresh mixed berries on top of the batter.
  7. Bake: Place the pan in the oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly when nudged.
  8. Cool and chill: Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours to fully set and develop flavor.

Notes

  • Use a mix of your favorite berries for variety, such as blackberries or cherries.
  • Garnish with additional fresh berries and peach slices before serving for a beautiful and appetizing presentation.
