Description

These Super Moist Funfetti Cupcakes are a delightful treat that will bring a pop of color and flavor to any occasion. Light and fluffy cupcakes speckled with rainbow sprinkles, topped with a creamy buttercream frosting and more sprinkles!

Cupcake:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter (softened)
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/3 cup rainbow sprinkles

Buttercream Frosting:

  • 1/2 cup butter
  • 2 cups powdered sugar
  • 12 tbsp milk
  • 1 tsp vanilla
  • Extra sprinkles for topping

Instructions

  1. Preheat oven and prepare tin: Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Prepare cupcake batter: In a bowl, cream together butter and sugar. Add eggs, vanilla, sour cream, and milk. Mix in dry ingredients until just combined, then gently fold in rainbow sprinkles.
  3. Bake: Fill cupcake liners about 2/3 full with the batter. Bake for 18–20 minutes or until a toothpick inserted comes out clean. Allow cupcakes to cool completely.
  4. Prepare frosting and decorate: In a separate bowl, beat butter until smooth, gradually add powdered sugar, milk, and vanilla until desired consistency. Pipe frosting onto cooled cupcakes and decorate with additional sprinkles.
