Cupcake:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter (softened)
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/4 cup milk
- 1/3 cup rainbow sprinkles
Buttercream Frosting:
- 1/2 cup butter
- 2 cups powdered sugar
- 1–2 tbsp milk
- 1 tsp vanilla
- Extra sprinkles for topping
Instructions
- Preheat oven and prepare tin: Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
- Prepare cupcake batter: In a bowl, cream together butter and sugar. Add eggs, vanilla, sour cream, and milk. Mix in dry ingredients until just combined, then gently fold in rainbow sprinkles.
- Bake: Fill cupcake liners about 2/3 full with the batter. Bake for 18–20 minutes or until a toothpick inserted comes out clean. Allow cupcakes to cool completely.
- Prepare frosting and decorate: In a separate bowl, beat butter until smooth, gradually add powdered sugar, milk, and vanilla until desired consistency. Pipe frosting onto cooled cupcakes and decorate with additional sprinkles.
